Meet Don Carlos

La Playa Farm | Elevation 1800 | Village: Las Colmenas

High‑altitude precision, small‑batch harvesting, and the discipline of a life built around coffee

La Playa Farm sits at 1800 mslm, where altitude becomes one of the most important factors in coffee quality.

At higher elevations:

  • Coffee cherries mature more slowly, allowing sugars to develop fully
  • Cooler temperatures create denser beans, which roast more evenly
  • The resulting cup profile becomes sweeter, brighter, and more complex

This farm works in small, carefully managed batches, where every pick is done by hand and every cherry is selected at peak ripeness. They collaborate with specialists to ensure that every step from soil management to fermentation, is sustainable and respectful of the environment.

Harvest season is intense. Days begin before sunrise, and work often stretches 10 to 12 hours. Despite pressure to industrialize, they protect traditional methods because they believe quality cannot be rushed.

There is deep pride in knowing that their coffee travels far beyond their mountains, that something grown with so much discipline and sacrifice is enjoyed around the world. And like all specialty producers, they understand that excellence requires patience, season after season.
