The Castillo Traditional process is a time-honored method used by Colombian coffee farmers for generations. It reflects a simple, natural, and effective way of processing coffee.

The process begins with the careful selection of ripe cherries, after which any defective cherries are removed by floating them in water. Next, the cherries are depulped to separate the beans from the fruit. Unlike the washed process, there is no fermentation or washing stage. Instead, the beans, with their sticky mucilage still intact, are laid out to dry directly under the sun. This slow, natural drying allows the sugars from the mucilage to remain on the beans, enhancing the final flavor.
