Collection: Washed Process
In the washed process, the coffee cherries are de-pulped to remove the outer skin before fermentation. The beans are then fermented in water to remove the mucilage (the sticky layer around the bean). After fermentation, the beans are washed thoroughly and dried.
Characteristics:
Flavor Profile: Often leads to a cleaner, brighter flavor profile with pronounced acidity. It highlights the intrinsic characteristics of the coffee’s origin.
Body: Typically has a lighter body compared to honey and traditional methods.
Aroma: Can be more floral and fruity, depending on the variety and processing.
